Nicola Cavicchini brings over eight years of experience at luxury resorts where he honed his culinary style and expanded his skillset. Cavicchini is known for his distinct flavor combinations and influences from his upbringing in Northern Italy. In addition to his familial influences, Cavicchini has gained experience from highly esteemed establishments including Rosewood Miramar Beach and Four Seasons Maui, where he served as the Senior Chef De Cuisine and the Chef De Cuisine, respectively. Cavicchini culinary philosophy is deeply fueled by locally sourced, ingredient-driven cooking, which he has experienced throughout his life. He understands that California cuisine is a melting pot of various cultures and is determined to cultivate unique dishes that enhance the natural bounty of California.
"I am honored to be at the helm of CordeValle's creative culinary program," said Cavicchini. "The property has long been lauded for its culinary prowess and I am excited to put my spin on CordeValle's three existing restaurants by creating sensory dining experiences that combine influences of my culinary beginnings with the beautiful bounty for which the area is known."
After being closed for the last few years, we are happy to announce that Il Vigneto will be re-opening. We are now accepting reservations with the first night being May 26th. Il Vigneto will be open on Friday and Saturday nights. During holiday weekends, we will be open on Sundays as well. Reservations are required. The menu will be a curated menu by Chef Nicola with the inspiration of an ItalCali steak house with fresh pasta and great dry-aged steaks.
New Pool Update
We have completed the new pool area bar and we will be offering expanded food & beverage service by the pool all summer long. We have also planted new flowers around the clubhouse and painted the fences outside of the Men's Member Lounge. We will continue to upgrade the club throughout the summer and will keep informed of upcoming projects. We look forward to seeing you soon.
